100% Whole Wheat Pretzel (4-Ingredient)

This whole wheat pretzel recipe is no-egg, no-dairy, no-oil, and no-sugar

Ingredients
  

Whole Wheat Pretzel Ingredients
  • 1 1/2 cup Fine whole wheat flour 210g or 7.4 oz
  • 1/2 tsp Dry yeast
  • 1/2 tsp Salt
  • 3/4 cup Water
Baking Soda Bath
  • 2 tbsp Baking soda
  • 2 cup Water 500 ml or 16.9 oz
Topping (Optional, but recommended)
  • 1 handful Pearl salt See my recommendation above. Can be replaced with regular salt
  • 2 tbsp White sesame seeds Optional

Method
 

Make the Pretzel Dough
  1. Prepare all the ingredients. Mix the dry ingredients: whole wheat flour, salt, and yeast.
  2. Add water to the dry ingredients. Mix roughly until there is no visible dry flour. Set aside.
  3. Leave the dough. It would be a very rough dough. In the meantime, we will prepare the baking soda wash.
Make Baking Soda Bath
  1. Prepare a pot and add water. Add baking soda to the water.
  2. The water would be opaque. Stir and start to boil until the water gets clear. Remove the pot from the heat. Set aside.
Shape Pretzels
  1. Take the dough and lightly knead. The dough should be soft and easy to handle now.
  2. Divide the dough into 6 pieces.
  3. Take one piece and elongate the dough into a long stick that is about 50 cm (19-20 inches). See detailed instructions with pictures above.
  4. Make the piece into a pretzel shape. Repeat until you are done with all 6 pieces.
  5. Preheat the oven at 230°C (445°F). Oil or sprinkle semolina flour on the baking tray.
  6. While waking for the oven to heat up, submerge the pretzels into the soda wash for 30 seconds each. This will give the iconic redish-brown pretzel color to the pretzel!
Bake
  1. Sprinkle the toppings of your choice.
  2. Place the pretzels into the oven and bake for 10 minutes.
  3. Take out the pretzel and cool it down for 10 minutes. Enjoy!
