Have about 6 to 8 ripe, hot-pink-colored prickly pears. Wash them thoroughly and peel them.
Cut the prickly pear flesh into cubes, and mash them on a filter to take out the seeds from the flesh.
Once you have taken out all the seeds, put them into a blender and blend until smooth. Take 2 cups of prickly pear puree.
In a separate bowl, pour the prickly pear puree and mix the fiber syrup and salt in. Let it sit for 30 minutes until the salt dissolves.
Pour the base into an empty CREAMi pint. Place the storage lid on a pint and freeze for 24 hours.
Remove the pint from the freezer and remove the lid from the pint. Place the pint into the Ninja Creami Ice Cream Maker.
Select SORBET. Run the program.
When processing is complete, remove the sorbet from the pint.
Serve immediately. Enjoy!
