Black Sesame Seed Porridge (Heugimja-juk)

Try this luxurious and gourmet black sesame porridge that used to be a royal dish!

Ingredients
  

  • 2/3 cup White, short-grained rice
  • 1/3 cup Glutinous white rice Can be substituted with white, short-grained rice if you don't have it
  • 2 tsp Salt To taste
  • 1/2 cup Black sesame seeds Toasted
  • 5 cups Water

Method
 

Preparing Black Sesame Mixture
  1. Take a frying pan and put it on medium heat. Once the pan is heated, add half a cup of black sesame seeds. Keep stirring the black sesame seeds so they are toasted evenly.
  2. Toast the seeds for about five minutes while stirring. You will be able to smell the toasted sesame seeds.

  3. Remove them immediately from the heat once you smell the toasted seeds. Once they are burned, they will be bitter and will smell.
  4. Add the sesame seed to a food processor or blender and pour in a cup of water and 2 teaspoons of salt. Blend until smooth and fine. Set aside.

Making Black Sesame Porridge
  1. Take 2/3 cup of short-grained white and 1/3 cup of glutinous rice and wash thoroughly. You may substitute this with 1 cup of all-white or all glutinous rice.
  2. In a pot, take 4 cups of water and add the washed rice. Set aside for at least 30 minutes.
  3. Start cooking the rice in the pot. Bring the pot to a boil and decrease the heat to medium-high to a simmer. Close the lid and cook for 25 minutes.
  4. With a stick blender, blend the rice porridge until smooth.
  5. Add the prepared black sesame mixture to the pot. Mix well. Cook for another 5 minutes.
  6. Take the porridge into a bowl. Optionally, you can garnish the black sesame porridge with a few pine nuts in the middle.
  7. Serve hot. Enjoy!
