Easy Korean Vegetable Porridge Recipe

This Korean vegetable porridge is easy to make and easy to digest.

Ingredients
  

  • 1/2 cup Onion 1 medium-sized onion, Finely-chopped
  • 1/2 cup Carrot Finely-chopped
  • 1/2 cup Zucchini Finely-chopped
  • 1/4 cup Dried shiitake mushrooms
  • 1 cup Short-grained white rice Can be substituted with brown rice
  • 2 1/2 cups Water
  • 2 tbsp Soy sauce
Optional Toppings
  • 1 dash Fresh ground pepper To your liking
  • 1/4 cup Toasted sesame seeds Ground
  • 1/4 cup Green onions Finely-sliced
  • 1 tbsp Sesame oil

Method
 

  1. Take 1 cup of short-grained white or whole-grained rice and wash thoroughly.
  2. In a pot, take 2 1/2 cups of water and add the washed rice. Set aside for at least 30 minutes.
  3. Take 1/4 cup of dried shiitake mushrooms and soak them in water. Set aside.
  4. In the meantime, prepare an onion, a carrot, and a zucchini. Peel the onion and wash all the vegetables.
  5. Finely chop the vegetables and take roughly 1/2 cup of each vegetable.
  6. Take out the dried shiitake mushrooms from the water and finely chop them.
  7. Start cooking the rice in the pot. Bring the pot to a boil and decrease the heat to medium-high to a simmer. Close the lid and cook for 20 minutes.
  8. Then add the rest of the chopped vegetables to the pot and cook for another 10 minutes.
  9. Add 2 tablespoons of soy sauce. Add more water to the consistency you prefer, and adjust the seasoning with more soy sauce to your liking.
  10. Take the porridge into a bowl. Optionally, you can add freshly ground pepper, ground sesame seeds, sliced green onions, or sesame oil as toppings.
  11. Serve hot. Enjoy!
