Korean Sweet Potato Dumpling

Fried sweet potato dumplings with sweet corn and cheese filling. It's so good!

Ingredients
  

  • 17 oz Sweet potato 500g
  • 6 oz Mozzarella cheese 170g, can be substituted with vegan mozzarella cheese
  • 7 oz Sweet corn 200g
  • 1 tsp Salt
  • Dumpling sheets
  • 1/4 cup Oil To fry
Optional Ingredients
  • 1 tbsp Onion powder
  • 1/4 tsp Garlic powder
  • 1/4 tsp Cinnamon powder
  • Pepper to taste

Method
 

  1. Prepare sweet potatoes. 2 small to medium or one big one would make 17 oz (500 g) of sweet potatoes. Wash the sweet potatoes thoroughly.
  2. You can cook the sweet potatoes by microwaving the sweet potatoes for 10 minutes. First, poke some holes with a fork through the skin. This allows the steam to leave. Or, you can peel the sweet potato skins and cut them into pieces. Steam the sweet potatoes for 20 minutes.
  3. Bring a bowl and add the cooked sweet potatoes. Mash it with a masher. Add mozzarella cheese and sweet corn to the mix. Sprinkle salt and mix again.
  4. Optionally, you can also add other additional ingredients of your choice. I added cinnamon powder, onion and garlic powder, and pepper. Mix well again.

  5. Prepare dumpling sheets. Lay a sheet and add the filling inside. Fold it and make a dumpling. Repeat the process to make the dumplings.

  6. You will be able to make 30 dumplings with the recipe. Woohoo!
  7. Prepare a pan and add two tablespoons of oil at a time. Heat the pan to medium-high heat.
  8. Place the dumplings on the pan and start cooking. Flip them over once one side is cooked properly.
  9. Repeat the process until you finish cooking all the dumplings.
  10. Serve hot and dip it in the soy sauce. Enjoy!
