Vegan Korean Meatball Recipe

Traditionally vegan, make this delicious Korean meatball that is made of soybeans!

Ingredients
  

Main Ingredients
  • 1 cup Dried soybeans soaked overnight
  • 1/4 cup Rice flour
  • 1/4 cup Carrots diced
  • 1/4 cup Onion diced
  • 1/4 cup Green onions diced
  • 4 Shiitake mushrooms soaked in water if dried
  • 1 tbsp Ground flaxseed
Seasonings
  • 1 tsp Salt
  • 1/2 tsp Ground black pepper
  • 1/4 tsp Ginger powder
  • 1/4 tsp Turmeric powder For color, flavor, and nutrients
  • 1 tbsp Garlic Minced
  • 1 tbsp Soy sauce

Method
 

  1. Soak the dried soybeans overnight or for longer than 8 hours. It will become more than double in size.
  2. Into a pot, add water and the soybeans. Bring it to a boil and cook the soybeans for 20 minutes.
  3. Dice carrots, green onions, onions, and mushrooms or put them in the food processor. You may dice the shiitake mushrooms into bigger pieces if you want texture.
  4. Using a food processor, blend the cooked soybeans roughly. You want some coarse texture, not puree.
  5. In a bowl, mix all the ingredients including the seasoning ingredients.
  6. Hit a pan and coat the surface with some toasted sesame oil.
  7. Make the meatballs into a flat meatball shape and cook them in the pan.
  8. Cook for about 5-10 minutes on medium heat for each side.
  9. Depending on your preference, you can serve it with ketchup, honey mustard, or soy sauce. Enjoy!
