Delicious and healthy oat pancake recipe for your vegan brunch!
Servings: 2
Course: Breakfast
Cuisine: American

Ingredients

Dry Ingredients
  • 2 cup Old-fashioned rolled oats Blended into powder
  • 2 tbsp Ground flaxseed
  • 2 tbsp Date sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Turmeric Optional
Other Ingredients
  • 2 cup Oat milk Any kind of plant milk works
  • 1/2 cup Wild blueberry Frozen or fresh
  • 1 tbsp Neutral oil

Method

  1. Grind oats to make it into powder.
  2. Add the rest of the dry ingredients into a bowl.
  3. Then put oat milk into the bowl. Combine well. Then put wild blueberries into the mixture. You don't want to overmix once the wild blueberries are combined in the mixture because it can turn your pancake to dark blue.
  4. Add some oil to the pan and swirl to coat. In a ladle, scoop the batter and cook it in the pan. You can usually make 3 pancakes in a pan at a time. Cook for 3 minutes until the bottoms are golden-brown, then flip to cook the other side. It may take about 2-3 minutes.
  5. Repeat cooking all the remaining batter, then serve with all the delicious toppings as you like!
