Hello, everyone! It’s Kreamy Vegan. Are you having a great day? It was a long weekend in Norway, so I’m having a great weekend. I spent lots of time in nature with my family in Horten, Norway. We foraged some herbs in the forest and cooked them for dinner. They are so delicious and healthy! 🌿

What are some foods that you try to eat more of because of their health benefits? Interestingly enough, it’s the raspberries for me. I enjoy eating lots of healthy food because I genuinely enjoy the lovely taste of them. But raspberries on their own can be a little blended for me. On top of that, I don’t really like their seeds. They are too small to take out when I’m eating them but too big to feel them in my mouth. So what do I do? Raspberries, like other berries, are one of the most nutrient-dense fruits in the world. To eat more raspberries while enjoying them, I love making raspberry sorbet!

Try this super refreshing raspberry sorbet recipe. With some lemon juice, this raspberry sorbet has the best fresh taste ever. As I explained above, raspberries offer many nutritional values. We won’t cook or add sugar to the raspberry sorbet recipe, which will preserve most of the nutritional benefits of the raspberries. Here are some health benefits of raspberries you may reap.

Tips for Making Raspberry Sorbet

1. Remove Raspberry Seeds for a Perfect Puree

The very first step to making raspberry sorbet is to craft a raspberry purée. This is a crucial part of achieving the sorbet’s smooth and luscious texture. Here are two main reasons why I recommend taking the seeds out of the raspberries:

  • Smooth Texture

Take the seeds out using a strainer from the puree to make a puree with a silky smooth consistence. Those little raspberry seeds can feel gritty on your tongue. Taking out the seeds can make every spoon of raspberry sorbet velvety and melt-in-your-mouth.

  • Concentrated Raspberry Flavor

Seeds usually have their own flavor, including a slight bitterness. When you make raspberry sorbet with the raspberry seeds blended together, you might be able to taste something different from your regualr raspberry flavor. That’s because we don’t eat ground raspberry seeds when we have raspberries.

So, if you want the essence of sweet and tart flavors of the raspberries, let’s remove the seeds.

2. How to Store Raspberries

Raspberries are very soft and can be mushy with only a slight pressure. They also can go bad quickly, so wash them right before you are about to eat them. It’s best to store the raspberries for 3–4 days.

3. Personalize with Other Toppings

Have fun with your raspberry sorbet with lots of other toppings of your choice! With raspberry sorbet, I love putting more fresh raspberries on top or other fresh berries, such as blueberries and blackberries. If you want to be fancier, put some edible flowers on top.

Best Raspberry Sorbet Recipe

Make this refreshing and tangy sorbet recipe using Ninja Creami Ice Cream Maker!
Course Dessert

Equipment

  • 1 Ninja Creami Ice Cream Maker

Ingredients
  

  • 2 cups Raspberry purée Prepare 3 cups of raspberries
  • 1/3 cup Date syrup
  • 1 tbsp Lemon Juice
  • 1/4 tsp Salt

Instructions
 

  • Prepare about 3 cups of raspberries. Wash them lightly and quickly in cold water.
  • Roughly blend the raspberries with a blender. Don’t blend it fine; otherwise, it will blend the seeds and make it bitter.
  • Pour the raspberry blend into the strainer. Press the raspberry pulp through the mash using a spatula or the back of a spoon. Move the spatula or spoon in a circular motion to help push the juice and pulp through while leaving the seeds behind.
  • Take 2 cups of raspberry purée.
  • Mix 1/3 cup of date syrup with the raspberry purée. Add a tablespoon of lemon juice and 1/4 teaspoon of salt.
  • Mix everything and pour it into the pint. Let the salt dissolve for 30 minutes. Place the storage lid on a pint and freeze for 24 hours.
  • Remove the pint from the freezer and remove the lid from the pint. Place the pint into the Ninja Creami Ice Cream Maker.
  • Select SORBET. Run the program.
  • When processing is complete, remove the sorbet from the pint.
  • Serve immediately. So delicious!
