Here are some popular Korean porridge types, called “jook” or “juk”.

Black Sesame Seed Porridge (Heugimja-juk)
Ingredients
Method
- Take a frying pan and put it on medium heat. Once the pan is heated, add half a cup of black sesame seeds. Keep stirring the black sesame seeds so they are toasted evenly.
- Toast the seeds for about five minutes while stirring. You will be able to smell the toasted sesame seeds.

- Remove them immediately from the heat once you smell the toasted seeds. Once they are burned, they will be bitter and will smell.
- Add the sesame seed to a food processor or blender and pour in a cup of water and 2 teaspoons of salt. Blend until smooth and fine. Set aside.

- Take 2/3 cup of short-grained white and 1/3 cup of glutinous rice and wash thoroughly. You may substitute this with 1 cup of all-white or all glutinous rice.
- In a pot, take 4 cups of water and add the washed rice. Set aside for at least 30 minutes.
- Start cooking the rice in the pot. Bring the pot to a boil and decrease the heat to medium-high to a simmer. Close the lid and cook for 25 minutes.
- With a stick blender, blend the rice porridge until smooth.
- Add the prepared black sesame mixture to the pot. Mix well. Cook for another 5 minutes.
- Take the porridge into a bowl. Optionally, you can garnish the black sesame porridge with a few pine nuts in the middle.
- Serve hot. Enjoy!
Tips for Black Sesame Seed Porridge Recipe
1. Garnish with Pine Nuts
If you want to decorate this porridge, garnish it with pine nuts at the top and in the center of the porridge. It is one of the most common ways to garnish many types of porridge in Korea.
2. Season with Salt or Sugar
