Hello, my beautiful people! Today, I want to introduce you to a very unique recipe—an easy Korean sweet potato dumpling recipe. It is a modern take on dumplings, as there was neither cheese nor sweet corn in Korea back in the day. We didn’t use sweet potato as the filling, either. Nevertheless, this has become popular in Korea and has attracted worldwide attention. There might be other sweet potato dumplings out there that I don’t know of, but I will show you this Korean Cheese Corn Sweet Potato Dumpling recipe here.
So let me tell you a quick story of how this began.
Introduction to Korean Cheese Corn Sweet Potato Dumpling
In February 2023, there was a Korean entertainment called Fun-Staurant, which featured a celebrity named Jung Sang-hoon (정상훈). He is known for making easy and delicious snacks for kids. On the program, he featured sweet potato jam and sweet potato dumplings. He makes the dumplings with the sweet potato jam filling he made, but I have modified his recipe slightly to make it healthier and more adult-like. But certainly, my recipe and many other Korean sweet potato dumplings have evolved from his recipe. Thank you, Mr. Sang-hoon, for sharing this recipe!

The ingredient combination of sweet potato, cheese, and corn is a very modern Korean style. The sweet and salty combination is so addictive you can’t help but want more.

When you bite into the crispy and chewy dumpling layer, you will soon meet with the creamy and sweet filling from the mashed sweet potato. Then there is a juicy pop of fresh, sweet corn kernels and cheesy gooeyness. (You can make this with some sweet potato jam as the filling too!)
And on top of that, it is quite simple to make! You will impress your friends and family if you serve this as a side dish on your dinner table.

I love going through the health benefits of an ingredient in a dish. So for today, I want to tell you a little about the health benefits of sweet potatoes. No matter what sweet potato type you are using for this recipe, here are some interesting health benefits you can expect from eating sweet potatoes.

Ingredients of Sweet Potato Dumpling
You only need about four of these main ingredients.

- Dumpling sheets
- Sweet potato of your choice
- Sweet Corn
- Mozzarella Cheese*
* I used vegan mozzarella cheese for this recipe. They work great! You could use the same amount of vegan cheese for the recipe.
Once you have this, you can customize it by adding other ingredients, such as spices or herbs.

Variations of Korean Sweet Potato Dumplings
1. Choose the sweet potatoes of your choice.
I have many sweet potato recipes on my blog, and in many cases, you can substitute one sweet potato for another. There are orange sweet potatoes (also called yam sometimes), yellow sweet potatoes that are often eaten in Korea and Japan, and purple sweet potatoes that are grown and eaten in Southeast Asia.

There are recipes that call for only one type of sweet potato, such as my Okinawan purple sweet potato salad or sweet potato rice cake recipes.

In this recipe, however, you could use any kind of sweet potato of your choice! Just be aware of the differences.
- Orange sweet potato: It is moist and sweet with bright orange flesh.
- Yellow sweet potato: Mildly sweet, earthy, and nutty flavor. Dry and starchy flesh with a light yellow color.
- Purple sweet potatoes: Dense and very creamy with a rich flavor and sweetness.
2. Add aromatics
You could add some aromatics to the filling, such as onions, garlic, and chili. You could do it in two different ways: by adding fresh chopped aromatics or by adding powder. If you add fresh chopped aromatics, it also adds a nice crunchy and juicy texture to the filling. If you add powder, you can surely add a punch of more flavor!

I love adding just a tiny bit of cinnamon powder to the sweet potato filling. It elevates the taste nicely.
Expert Tips for Making Dumplings
1. Try not to fill the dumplings too much.
Overfilling dumplings might be tempting, I know because I still make this mistake even to this day. I also have to keep reminding myself that I need extra space on dumpling sheets to close them. And often, you need more space than you think.
Overfilled dumplings are hard to seal, so often you can’t even close them to finish making them. But if you do it by force, they can burst open and leak all the delicious juices out of it. So please, make sure to fill the dumplings just enough.

2. Use water as glue to hold the dumpling sheets.
This is especially true if you are using store-bought dumplings. I usually buy frozen dumpling sheets from stores, and they make the job so much easier. But the sheets can be a little hard and difficult to close. In that case, dab your pinky finger with water and swap it around the dumpling sheets where you close. It acts as glue to hold the fillings inside.
But remember not to dip all your fingers into the water. Otherwise, you won’t be able to handle the dumplings cleanly! (Imagine having glue all over your hands while making dumplings.)

Easy Korean Cheese Corn Sweet Potato Dumpling Recipe

Method
- Prepare sweet potatoes. 2 small to medium or one big one would make 17 oz (500 g) of sweet potatoes. Wash the sweet potatoes thoroughly.
- You can cook the sweet potatoes by microwaving the sweet potatoes for 10 minutes. First, poke some holes with a fork through the skin. This allows the steam to leave. Or, you can peel the sweet potato skins and cut them into pieces. Steam the sweet potatoes for 20 minutes.
- Bring a bowl and add the cooked sweet potatoes. Mash it with a masher. Add mozzarella cheese and sweet corn to the mix. Sprinkle salt and mix again.
- Optionally, you can also add other additional ingredients of your choice. I added cinnamon powder, onion and garlic powder, and pepper. Mix well again.

- Prepare dumpling sheets. Lay a sheet and add the filling inside. Fold it and make a dumpling. Repeat the process to make the dumplings.

- You will be able to make 30 dumplings with the recipe. Woohoo!

- Prepare a pan and add two tablespoons of oil at a time. Heat the pan to medium-high heat.
- Place the dumplings on the pan and start cooking. Flip them over once one side is cooked properly.
- Repeat the process until you finish cooking all the dumplings.
- Serve hot and dip it in the soy sauce. Enjoy!
