We all know that we need to incorporate more greens into our diet. It’s easier said than to be done. What greens? How should I eat? How much? Is it really that healthy? There are so many questions you don’t know the answers to, then you just give up on the thought and tell yourself, “It’s not going to be tasty, anyway.” But is it really?
Don’t you worry. I had the same question when I first tried to eat more greens, so here I am to tell you there are countless ways! Let’s just take it step by step. In this article, I want to start off with recipes that use spinach. Many shops often sell frozen spinach and they are not only cheap but also so versatile and delicious. Hence, with its subtle savory, nutty, sweet flavor and soft texture, spinach is one of the easiest greens to include in your diet! 1. Spinach Namul in Bibimbap
Bibimbap is a popular Korean dish known for its colorful presentation and delicious combination of flavors and textures. The word “bibimbap” translates to “mixed rice” in English, which describes precisely how this dish is prepared and served. There are so many variations of bibimbap, and I’d love to introduce them here on my blog. But first off, this is the most common way to prepare it and it includes cooked spinach! It is not just sauteed spinach, but it is prepared in a Korean way as spinach namul. Simply substitute the meat with vegan alternatives, tofu, or beans, and this dish will fill your body with so many nutrients and fiber!
2. Poke bowl
A poke bowl is an invention in Hawaii that has been a blend of Japanese and Hawaiian culinary influences. It has gained popularity in recent years for its wide variety of ingredients, just like bibimbap! It often includes a variety of vegetables and other toppings, and I like to sneak in spinach in this recipe so it is more nutrient-dense. After assembling a poke bowl, simply pour the sauce of your choice and you will have your delicious poke bowl!
3. WFPB creamed spinach
Creamed spinach might be one of the most known recipes to use frozen spinach. I love it too! I just changed the traditional recipes into whole food plant-based, WFPB, and I love it even more. It is creamy, nutty, and melts in my mouth.
4. Palak curry
Palak means spinach in many Indian languages, including Hindi, so it means spinach curry. It is a creamy, delectable, and nutritious dish that I love so much and it is a great way to use frozen spinach! It gets its creamy texture from cooked spinach, and traditionally cream or yogurt, but I substitute these with cashew paste. Learn how I cook my palak curry.
5. Falafel
Last but definitely not the least, falafels! Although the restaurant and store-bought falafels usually have brown insides, the real authentic falafels are green inside because it has a lot of fresh herbs such as parsley, dill, and cilantro in the recipe. You can use spinach either to make it a little more green or to have a less herbal taste by substituting other herbs with spinach.
