Hello, everyone! After writing about the lemon lime sorbet recipe yesterday, I got inspired to write about another citrusy frozen treat… the lemon sherbet recipe! It’s my first sherbet recipe to introduce on my blog and I’m excited for it.

Lemon sherbets are one of the most popular and well-known sherbets. The creamy, soft, milky, sweet, and refreshing, lemon sherbets are much loved for a reason! So let’s get into the basics of the sherbets and what makes the best lemon sherbet recipe.

Introduction to Lemon Sherbet Recipe

I shared lemon lime sorbet and lemon sorbet recipes, but is the lemon sherbet going to be very different? Well, apart from the obvious fact that this only has lemon, the difference between the sorbet and the sherbet makes a big difference!

About Sherbet

The ingredients of sherbets are often the main flavoring fruit ingredient, or the juice, sweetener, and milk or cream. Sometimes, egg whites or gelatin can be added to the recipe for texture, like gelato.

Sorbet vs Sherbet

Both sorbet and sherbets are quite light and refreshing, usually made with refreshing fruit types.

The biggest difference between sorbet and sherbet is the inclusion of dairy products, egg whites, and gelatin. Sherbets always have milk or cream, egg whites, or gelatin.

Sorbet, on the other hand, can be made with only pure fruits or even juice. Some types of sweetener can be added to sorbet, but usually, that’s all you need to make a sorbet. Therefore, sorbet is vegan, whereas sherbet includes milk and is not suitable for vegans.

There are many benefits to making your own homemade lemon sherbet, and one of them is using lots of fresh lemons that are healthy for you!

One of the most obvious ones is the high vitamin C content. But the vitamin C will be destroyed when freezing lemon sherbet so we will skip that part. Yet, lemons still have many more health benefits to offer than just vitamin C!

Also, one of the best things about making sorbet at home is that you can adjust the sugar content. If you find that my recipe is too sweet, please adjust the sugar content. I find this recipe to have a good balance of sweetness, freshness, and tartness, but you might have a different palate. 💛

Homemade Lemon Sherbet Recipe

Make this easy, delicious, and summery lemon sherbet at home!
Course: Dessert

Ingredients
  

  • 1 cup Lemon purée
  • 2/3 cup Oat milk Can be substituted with regular milk
  • 1/2 cup Erythritol with Stevia Can be substituted with regular sugar
  • 1/4 tsp Salt
  • 1 tsp Lemon zest
  • 3 drops Yellow food dye Optional

Equipment

  • 1 Ninja Creami Ice Cream Maker
  • 1 Blender

Method
 

  1. Prepare two to three medium-sized lemons. Wash them thoroughly.
  2. Grate the lemon skin and make 1 teaspoon of lemon zest.
  3. Cut the lemons in half and take out the seeds. Peel the skin.
  4. Blend the peeled lemon in a blender and make 1 cup of lemon purée.
  5. Into the CREAMi pint, add the prepared lemon purée and zest. Add the remaining ingredients, like sugar, milk, and salt. Optionally, you can add drops of yellow food coloring for color. Mix well.
  6. Place the storage lid on a pint and freeze for 24 hours.
  7. Remove the pint from the freezer and remove the lid from the pint. Place the pint into the Ninja Creami Ice Cream Maker.
  8. Select LIGHT ICE CREAM. Run the program.
  9. When processing is complete, remove the sherbet from the pint.
  10. Serve immediately. Enjoy!

Tips for Enjoying Lemon Sherbet

1. Decorate with Lemon Balm Leaf

Have you tried lemon balm leaves? It’s a type of herb and looks much like mint leaves, but they taste like lemons! They are incredible. If you have lemon balm leaves, I would decorate the lemon sherbet with them. But regular mint leaves also go well with all kinds of sorbet and many types of desserts.

2. Use Yellow Food Coloring

This is optional, but you can use yellow food coloring to make the lemon sherbet a light yellow color. It just reminds me more of lemon, and I love it.
