Introduction to Raspberry Gelato Recipe
Made with real raspberries (not like raspberry “flavored” or “colored” stuff from stores), this raspberry gelato has tartness, sourness, freshness, and sweetness all mixed together in a cup.
Unlike ice cream, gelato has a denser texture and more intense flavors due to its lower cream (fat) content and more main ingredients. In this case, raspberry gelato has more raspberries and no cream in the recipe than raspberry ice cream. That makes it a healthier ice cream alternative.

Gelato is a type of frozen treat that originated in Italy. Many gelato shops in Italy offer fresh, housemade gelatos.

Traditionally, gelato is made with milk, sugar, and flavorings. Some custard-based recipes also include egg yolks. Gelato has a dense texture due to a slower churning speed than ice cream so it has less air. This process gives the gelato its iconic dense and creamy texture, which is more intense than regular ice cream. Isn’t it so amazing that the creamy texture isn’t from cream? In fact, traditional gelato usually has little to no cream.

Instead of regular milk, I opted for plant milk. In Italian gelatos, some natural stabilizers like guar gum or carob bean gum are used to improve the texture and shelf life.

As I explained above, raspberries offer many nutritional values. We won’t cook or add sugar to the raspberry gelato recipe, which will preserve most of the nutritional benefits of the raspberries. Here are some health benefits of raspberries you may reap.

Tips for Raspberry Gelato Recipe
1. Remove Raspberry Seeds for a Perfect Puree
The very first step to making raspberry gelato is to craft a raspberry purée. This is a crucial part of achieving the gelato’s smooth and luscious texture. Here are two main reasons why I recommend taking the seeds out of the raspberries:
- Smooth Texture
Take the seeds out using a strainer from the puree to make a puree with a silky smooth consistence. Those little raspberry seeds can feel gritty on your tongue. Taking out the seeds can make every spoon of raspberry gelato velvety and melt-in-your-mouth.
- Concentrated Raspberry Flavor
Seeds usually have their own flavor, including a slight bitterness. When you make raspberry gelato with the raspberry seeds blended together, you might be able to taste something different from your regualr raspberry flavor. That’s because we don’t eat ground raspberry seeds when we have raspberries.
So, if you want the essence of sweet and tart flavors of the raspberries, let’s remove the seeds.
2. How to Store Raspberries
Raspberries are very soft and can be mushy with only a slight pressure. They also can go bad quickly, so wash them right before you are about to eat them. It’s best to store the raspberries for 3–4 days.

3. Personalize with Other Toppings
Have fun with your raspberry gelato with lots of other toppings of your choice! With raspberry gelato, I love putting more fresh raspberries on top or other fresh berries, such as blueberries and blackberries. If you want to be fancier, put some edible flowers on top.

Refreshing Raspberry Gelato Recipe

Method
- Prepare a cup of raspberries. Wash them and dab the water out.
- Roughly blend the raspberries with a blender. Don’t blend it fine; otherwise, it will blend the seeds and make it bitter.
- Pour the raspberry blend into the strainer. Press the raspberry pulp through the mash using a spatula or the back of a spoon. Move the spatula or spoon in a circular motion to help push the juice and pulp through while leaving the seeds behind.
- Take 1/2 cup of raspberry purée and 1/8 cup of oats. Mix 1/3 cup of sugar of your choice with the raspberry purée. Add a tablespoon of lemon juice and 1/4 teaspoon of salt.
- Blend all of it again with a blender. Pour the mixture into the pint. Place the storage lid on a pint and freeze for 24 hours.
- Remove the pint from the freezer and remove the lid from the pint. Place the pint into the Ninja Creami Ice Cream Maker.
- Select GELATO. Run the program.
- When processing is complete, remove the gelato from the pint.
- Serve immediately. Buon appetito!
