I am so excited to have you here today to tell you about one of my favorite vegan brunch recipes of all time – the wild blueberry oat pancake with decadent coconut cream, topped with any toppings you like. Introduction to My Vegan Brunch Routine
Morning Person vs Night Person
I am a huge morning person. When I was in my teenage years, I used to love the nights. I used to be up until very late at night, and I used to love the stillness and the quietness of the world as the night falls. Interestingly enough, I love mornings so much for the same reason as I loved the night – the stillness, the quietness, and the serenity.
Waking Up in the Morning
On weekdays I wake up quite early in the morning. As I jump out of bed, I get dressed, clean myself, wear some sunscreen, and head out for the day. On weekends, I wake up slightly late. It’s so nice to snuggle in a warm blanket with my husband and he doesn’t let me go – so it’s his fault that I can’t get out of my bed. But we still try to get up around 9:30 in the morning or at least before 10. Then we make breakfast together. We are quite slow on the weekend morning so that becomes brunch, naturally.
I Love Brunch, But Vegan
It is one of my favorite times of the week. I love making vegan brunch with my husband on weekends. If not, sometimes I go out for brunch with my favorite brunch buddy. I have a friend who is also a big morning person like I am and she loves going out for coffee and brunch, so it’s perfect. She used to be vegetarian and still enjoys lots of plant food now, so she loves checking out vegan restaurants or cafes with me. Before becoming vegan, I would get bloated and feel heavy after eating fatty animal meat or dairy. But now when I eat vegan brunch, I feel very light and energized throughout the whole day. After my vegan brunch on weekends, I eat early dinner. Eating two meals a day works quite well for me, and helps me maintain intermittent fasting without obsessing over the eating time.

A Variety of Ingredients in Pancake Batter
One of my go-to vegan brunch recipes is some pancakes. And waffles. I love that you can just quickly whip up a batter and cook it on a pan or a waffle machine and eat some warm food. Especially when it comes to pancakes, I love that you can be a little more creative with the ingredients you put in the batter. You can put some fruits, chocolate chips, or even some spice like cinnamon in the batter. So for the first vegan brunch recipe, I thought I could share an oat pancake recipe with you.
Pancakes and Berries
Also, somehow pancake is eaten with more toppings than waffles. It might be because pancakes have a very soft texture and have a milder taste than waffles, so you need some toppings to enjoy the pancake better. But yes, I love putting lots of berries with my pancake like many other people. My favorite way to eat a pancake is to make blueberry pancakes with frozen wild blueberries, then top it with fresh strawberries and bananas.
Berries in Norway
A side note: Fresh Norwegian strawberries in season are divine, I love Norwegian strawberries in the summer. My goodness! They are quite small and hard, but so juicy and flavorful. And there are a lot of wild blueberries growing in Norway, so not only can you go blueberry-picking in the forest in the autumn, but also buy wild blueberries at most grocery stores. Maybe the fact that Norway has these amazing berries got me to enjoy berries even more. 🍒🍓🫐
A Vegan Oat Pancake?
Okay, you probably know a pancake recipe. If you search for a pancake recipe, there isn’t so much variety to find. A pancake is a pancake. But as a vegan, a health freak, I looked for many Whole Food Plant-Based recipes in the world and got to come up with one that I enjoy making and eating – the vegan oat pancake. Once you have the vegan oat pancake batter recipe, you can put blueberries or chocolate chips as you like. So this vegan oat pancake is made with oat flour and oat milk, thus, called a vegan oat pancake. With a few more interesting and healthy ingredients, here is the birth of my Vegan Oat Pancake Recipe by Kreamy Vegan.

Many wild blueberries are growing in the forest in Norway, so I love picking them during fall. I feel so blessed to be able to do that. This is the picture I took when I was in Beitostølen last fall picking blueberries! Do you see them? They are almost dark grey with a hint of blue.
Why Wild Blueberries?
You might have noticed that I keep mentioning the “wild” blueberries in the recipe, not just blueberries. Well, you could use just blueberries in the recipe. But wild blueberries are smaller, have very dark blue pigment that looks almost black, and are more sour with less sweetness than regular blueberries. These features of wild blueberries make a pancake a great carrier for other toppings. You also won’t have to wait for the big frozen blueberry to warm up and get cooked if you use these small wild blueberries. Moreover, wild blueberries have more nutrients and antioxidants than regular blueberries. Let’s go over the health benefits of wild blueberries.
Benefits of Wild Blueberries
All fruits have their own unique health benefits, including regular blueberries. However, wild blueberries have one of the highest concentrations of antioxidants in any food kind. Compared to cultivated blueberries in a study, wild blueberries are found to have nearly two times of antioxidants such as anthocyanin and polyphenol content! And together with this antioxidant and other nutrients in wild blueberries, the consumption of berries was found to help the brain and artery health.

Using Frozen Blueberries
According to this study conducted on wild blueberries, loss of anthocyanins and vitamin C occurs when blueberries are frozen. However, most of the other nutrients were found to stay effective. If you are going to use the blueberries in the pancake batter to cook, then it is fine to use frozen blueberries. They usually come in bulk, so I love having frozen blueberries at all times in my freezer along with other delicious frozen berries.

7 Dr. Gerger’s Daily Dozen in This Vegan Brunch
You know I follow Dr. Greger’s medical and diet advice religiously. He has what is called The Daily Dozen, which is twelve kinds of food and a regime that you should try to eat every day. Those include beans, berries, other fruits, cruciferous vegetables, greens, other vegetables, flaxseed, nuts and seeds, herbs and spices, whole grains, beverages, and exercise.
With this vegan blueberry oat pancake, you get to eat at least one each serving of berries, spice, whole grain, fruit, flaxseed, and nuts! And you would serve this delicious vegan brunch with a cup or two of coffee, won’t you? Then that adds up to checking 7 of Dr. Greger’s Daily Dozen lists! How incredible is that? And that was just one meal. You need more than one serving of other fruits and whole grains in a day, but it’s still a great score. With most other regular pancakes, you’d only get one serving of berries on the list… and lots of unhealthy saturated fat from butter and milk, as well as syrup and processed white flour that can spike up your blood sugar. Yikes.

Toppings for Vegan Blueberry Oat Pancakes | Vegan Brunch
Here are my favorite toppings for my vegan blueberry oat pancakes.
1. Coconut Cream
I don’t eat coconut cream so often, but sometimes I want to eat something so decadent and rich. That’s when I look for coconut cream. So creamy and rich, coconut cream can be such a great plant-based cream to add to desserts. It has its distinct coconutty scent and flavors, but I find it pleasant with my pancake. It makes me feel like I’m in a tropical heaven! Also, this coconut cream can really make your pancake even more moist and melt in your mouth.
2. Strawberries
Strawberries are so great as toppings or ingredients for a lot of desserts. The red shiny skin of strawberries make the planet and the dinner table so vibrant and romantic. Strawberries are one of my favorite toppings for pancakes. Some strawberries can be not so sweet, but then you can eat your strawberries with my sweet and delicious homemade apple date sauce!
3. Apple Date Sauce
I will share this recipe with you all soon, but it’s quite simple. You can make apple sauce or apple jam but instead of sugar, use date to sweeten. You might want to blend the apple and date mixture to make it more like syrup to eat with your pancakes. But it’s so worthwhile to take some time making it because this apple date sauce tastes sweet and fresh. It goes so well with pancakes.
4. Nuts
You don’t need to sprinkle some nuts on top of the pancake, but I like to have them on the side of my pancakes to eat with my pancake. Eating some delicious savory nuts can bring some interesting flavors and texture to your vegan brunch.
5. Bananas
Bananas are so soft, sweet, and fragrant. We can often forget how amazing bananas are because it’s everywhere… But back when my parents were kids, bananas used to be an extremely expensive type of food in Korea! Anyway, times have changed and bananas are sold everywhere. But I hope you get organic bananas because they not only taste so much better, but the pesticides they use on regular non-organic bananas are very bad for your skin, the environment, and the workers who spray the pesticides.

I had this wild blueberry oat pancake with a cup of black tea. My husband goes on a business trip to India once a year, and they have amazing black tea over there! So I always ask him to get some tea for me then 🥞☕
Wild Blueberry Oat Pancake & Coconut Cream | Vegan Brunch

Vegan Wild Blueberry Oat Pancake Recipe
Ingredients
Method
- Grind oats to make it into powder.
- Add the rest of the dry ingredients into a bowl.
- Then put oat milk into the bowl. Combine well. Then put wild blueberries into the mixture. You don’t want to overmix once the wild blueberries are combined in the mixture because it can turn your pancake to dark blue.
- Add some oil to the pan and swirl to coat. In a ladle, scoop the batter and cook it in the pan. You can usually make 3 pancakes in a pan at a time. Cook for 3 minutes until the bottoms are golden-brown, then flip to cook the other side. It may take about 2-3 minutes.
- Repeat cooking all the remaining batter, then serve with all the delicious toppings as you like!
