Hello, my lovely people! The spring is getting nearer these days in Norway, and I feel like making some light and energizing breakfast. So on weekends, I have been making these vegan protein waffles that provide me with a balance of protein, fiber, and healthy carbs. The wonderful smell of soft and pillowy waffles getting baked is one of the best things on the weekend. If you have been thinking that vegan, especially an even healthier one with protein, is not going to taste nice, you have to try this recipe! I’m not saying it because I’m vegan, but I honestly think that this waffle recipe is even better than the traditional one with dairy and egg.
Oh, I don’t know when and in what part of the world you are reading this post, but you could still make this delicious waffle. Making some fresh vegan protein waffles sounds like a wonderful idea no matter what! Then let’s get started.
Introduction to Vegan Protein Waffle Recipe
With this vegan protein waffle recipe, you will get waffles that are fluffy and pillowy! Not to mention its wonderful waffle smell.
Here are some reasons why you’ll love this recipe.
- High Protein
Are you looking for high protein recipe to get all ripped? Well, this recipe will give you lots of that from different kinds of plant ingredients!
- Allergy-Friendly
This is a dairy-free and egg-free recipe for those of you with some milk or egg allergies. Also, if you are lactose-intolerant, try following this waffle recipe. Traditional waffle recipes include butter and milk, which can give you stomachache.
- Low in Fat
There are two reasons why this vegan protein waffle recipe has a much lower fat content than other waffle recipes. Firstly, this recipe substitutes regular dairy to plant-based options, which are way lower in fat. Secondly, I modified the recipe so it is packed with phytonutrients without much added fat.
Ok, are you excited to learn about the ingredients for this recipe? I’ve been cooking so many waffles to create this waffle recipe, so I hope you like it!
Ingredients for Vegan Protein Waffle Recipe
The key to a great vegan protein is to make it fluffy on the inside, for which we will need an egg and lots of added oil (dairy butter) in a traditional recipe. But fear not; we don’t need crazy exotic ingredients to make this waffle.

Here are the ingredients we would need.
- All-Purpose Flour
All-purpose flour works the best, but you could substitute this with the equal amount of oat flour or whole-wheat flour to make it Whole-Food Plant-Based.
- Plant-Based Protein Powder
I use vanilla flavored protein powder because I don’t like the protein powder flavor. It has some sort of raw taste. I recommend using Orgain Organic Vegan Protein Powder, Vanilla Bean! It has protein powder from three types of beans and rice. It also has chia seeds for omega 3 as well as organic vegan cream base.
- Flaxseed Powder
We will make “flax egg” with flaxseed powder. Flax egg sounds quite exotic, but it is flaxeed powder mixed with water. It will have raw egg consistency when you leave it for 5 minutes, and will hold the baked goods like eggs do!
- Sugar
To make it no added-sugar version, I like using erythritol graules that has 1:1 sugar substitute. Just erythritol graules alone will have about 70% of sweetness to regular sugar, and it is hard to measure it again in a baking recipe. Micro Ingredients Erythritol Graules is the 1:1 sugar substitue, with 0 calories, and with no blood sugar spikes right after you’ve eaten.
- Baking Powder & Baking Soda
I will use both baking powder and baking soda, but you could use one of these if you like. I use both of them for a great rise and browning. Also, did you know that baking soda has health benefits? Some atheletes consume baking soda for that sole reason! So if you can make fluffy pancake with an ingredient that can help you to improve fitness, why would you not use it? You can read more about it on the CNN Health article Old pantry staple is new again with people using it to improve fitness, disease and more.
- Cinnamon & Cardamom
After living in Norway, I have been loving a little bit of warm spices like cinnamon and cardamom in baked goods! It is very common to have these spices in the baked goods here in Scandinavia. I like to add a little bit of both, and it gives more sweet flavor to the waffles.
- Plant Milk
You can use any plant-based milk of your choice, but I love adding oat milk for its natural sweetness.
- Plant-Based Butter
Just a little bit of plant-based butter to get the butter flavor makes this vegan protein waffle perfect!
Frequently Asked Questions About Protein Powder
Q. Which protein powder should I use?
Any plant-based protein powder could work. I recommend using vanilla-flavored for this waffle recipe for the best possible taste. Orgain Organic Vegan Protein Powder, Vanilla Bean is the best kind of protein powder I would use, with a mixture of protein powder and a vanilla flavor.
Q. Do I need to have protein powder in the recipe?
This recipe works absolutely fine without protein powder! If you don’t have protein powder, just add another scoop of wheat flour, and it should work fine.
Q. Why use vegan protein powder?
There are many advantages to using vegan protein powder over other types of protein powder. Whey protein, which is one of the most popular types of protein powder, is made out of milk and can be harmful to those of you who are lactose-intolerant or allergic to dairy. I also could taste a fishy scent when I tasted collagen from fish. Yikes!
Moreover, vegan protein powder is the most sustainable and eco-friendly choice. So it’s good for the earth and our health, and it simply tastes better.
Instructions to Make Vegan Protein Waffle
1. Prepare the Flax Egg
You can make the flax eggs by mixing water and flaxseed powder. You can buy flaxseed powder at stores or grind flaxseed freshly at home. Make sure the flaxseed powder is fine.

Prepare finely ground flaxseed powder. I grind the flaxseed at home.

Add water to the flaxseed powder and mix well. Let it sit for a few minutes, and you have a flax egg!
2. Mix the Dry Ingredients
In a large bowl, whisk together all the dry ingredients.
3. Combine Wet Ingredients
In a separate bowl, mix all the rest of the wet ingredients. Mix in the flax eggs we made earlier.
4. Make the Batter

Slowly pour the wet ingredients into the dry ingredients. Stir until well combined. But try not to overmix, as it might deflate the bubbles from the baking powder.

You will be able to see some bubbles like this.
Let the batter sit for 5-10 minutes until you are hitting up the waffle machine!
5. Cook the Waffles

Preheat your waffle maker. Lightly grease it with vegan butter.

Add the batter to the waffle maker.

Cook as the waffle instructions until golden brown. I have a basic waffle machine my husband bought when he was a student, but it still works just fine and makes great waffles!
Tips for the Best Vegan Protein Waffles
I learned this trick while I was learning to make Norwegian waffles. Norwegian waffles are also so amazing—they are heart-shaped, thin, and soft. They achieve a soft and lightly chewy texture by letting the batter sit for about 10 minutes. We don’t need to wait for a while. Also, we are letting the baking powder be activated, and the dry ingredients are getting hydrated well enough.
