Easy Black Sesame Soup

Method
- Take a frying pan and put it on medium heat. Once the pan is heated, add a cup of black sesame seeds. Keep stirring the black sesame seeds so they are toasted evenly.
- Toast the seeds for about five minutes while stirring. You will be able to smell the toasted sesame seeds.

- Remove them immediately from the heat once you smell the toasted seeds. Once they are burned, they will be bitter and will smell.
- Add the sesame seed to a blender and pour in a cup of water and 1/2 teaspoon of salt. Blend until smooth and fine.

- Once the sesame seed mixture is ready, take 1/4 cup of rice flour and mix well. Set aside.
- Take a pot and pour in 3 cups of water. Then, add the sesame mixture to the pot. Add 1/2 cup of sugar to the pot.
- Put high heat on the induction and bring the pot to a boil. Once it starts to boil, turn the heat down to medium heat. Let it simmer for another 20 minutes.
- Take the soup to a bowl. Enjoy!
Tips for Black Sesame Soup Recipe
1. White Rice Flour vs Sticky Rice Flour
Different recipes call for different rice flours, but I recommend using sticky rice flour for a plump, pudding-like texture for the black sesame soup recipe. However, if you have a hard time finding sticky rice flour, you can absolutely substitute it with regular white rice flour, or even just regular white rice or sticky rice. You can easily follow the same recipe by swapping the sticky rice flour with any rice or flour you wish to have. If you choose to use rice instead of rice flour, remember to cook the rice and make pureé out of it before using it in the recipe.

2. Serve it Chilled
This black sesame soup is usually served hot in China, but I find this soup to taste amazing (or even better) when it is chilled. When chilled, this black sesame soup hardens a little and becomes more like pudding. I love it!
