One of the fruits that I get quite excited about is nectarines. Ripe nectarines are fantastic, natural, juicy treats in the early summer. Biting into the firm yet tender nectarine, the sweet and tangy fresh juices ooze out into the mouth. There are many recipes you can do with nectarines, such as adding them to salads (yummy!), smoothies, and, of course, frozen treats. In the world of frozen treats, there are many different ways to enjoy nectarines. I want to share them all on my blog—on today’s blog post, I want to share the delicious nectarine sorbet recipe!

Sorbet, with its refreshing texture and vibrant flavors, is the best dessert during the summertime. (But you can eat it any time of the year, of course, like me. 😉) Fruit sorbets can be made as easily as freezing whole fruits and processing them in a blender or an ice cream maker like my Ninja Creami ice cream machine. But there are some ways to upgrade your fruit sorbet!
Capturing the essence of ripe fruits and enhancing their flavors is the key to making the best fruit sorbet.
Fruit Sorbet Kinds

There are many different kinds of peaches and nectarines.
Nectarine Sorbet
Nectarines refer to peaches with no hair on the skin. The skin has a satin shine to it, and the fruit has yellow-orange flesh. Nectarines have a stronger sour taste than regular peaches with hair, which makes them a great ingredient for desserts like sorbet! Nectarines are known for their excellent antioxidant components, such as vitamins, minerals, and polyphenols, that are great for our health. So this nectarine sorbet is a guilt-free dessert.

Nectarines are rich in a component called aspartic acid. Aspartic acids play a role in energy production in our bodies and activate metabolism. There are 460 mg of aspartic acid per 100 g (3.5 oz) of nectarines.

Tips for Making Nectarine Sorbet
1. Use Ripe Nectarines
Using ripe fruits is one of the most important things in making the best fruit sorbet.
You could use overripe nectarines and make great sorbet, but using unripe, hard nectarines is not preferred when making sorbet. But it can still be done.
- When You Only Have Unripe Nectarines
If the nectarines you have is still too hard and sour, leave it in the room temperature for a few days and it will ripe.
If you don’t want to wait, you can still make sorbet with it but keep in mind that it might not have the best flavor. You also might want to add more sugar in your sorbet recipe.

2. Store Nectarines in Shade
Nectarines and peaches lose their sweetnesss and flavor if they are kept too cold for too long in a refridgerator. Place your nectarines in a room temperature without direct sunlight. It will keep ripen over time in the room temperature.

Drizzle some date syrup on top of your nectarine sorbet!
3. Personalize with Other Toppings
Have fun with your nectarine sorbet with lots of other toppings of your choice! One of my favorites is the date syrup drizzle on top.

4. Use Food Coloring
This is optional, but I love using food coloring in the nectarine sorbet. To give the reddish-orange color that reminds you of ripe nectarines, add a few drops of red or orange food coloring to the sorbet. It will give you a beautiful color to the final result.

Ingredients of Nectarine Sorbet
Here is a very simple ingredient list for the nectarine sorbet. Just four or five ingredients are needed for the delicious homemade nectarine sorbet!
- Sugar
- Nectarines
- Citric Acid *
- Food Coloring (Optional)
- Salt
* If you don’t have citric acid, you can substitute it with lemon juice. But adding citric acid will give you a smoother texture and a tangier taste.

Best Nectarine Sorbet Recipe

Method
- Prepare two to three medium-sized nectarines. Wash them thoroughly.
- Cut the nectarines in half. Take out the stone.
- Blend the flesh of nectarines in a blender and make 2 cups of nectarine purée.
- Mix 1/3 cup of erythritol with monk fruit/stevia (or sugar), salt, citric acid, and nectarine purée. Blend well again.
- Pour the mixture into the CREAMi pint.
- Let the sugar and salt dissolve for 30 minutes. Mix again. Place the storage lid on a pint and freeze for 24 hours.
- Remove the pint from the freezer and remove the lid from the pint. Place the pint into the Ninja Creami Ice Cream Maker.
- Select SORBET. Run the program.
- When processing is complete, remove the sorbet from the pint.
- Serve immediately. Enjoy!
